    2 slices of white sandwich bread
    1/3 c. buttermilk
    3/4 pound 80% lean ground beef
    1/4 pound ground pork
    1/4 c. Parmesan cheese
    2 T minced fresh parsley
    1 large egg yolk
    1 clove of garlic (minced)
    salt and pepper
    vegetable oil


    Remove and discard crusts from bread and then tear into small pieces. Add the buttermilk and mash to a smooth paste using a fork. Add everything else except oil. Stir gently until combined and uniform. Gently form 1 1/2 inch round meatballs. Pour the oil into a 12 inch skillet until it measures a depth of 1/4 inch. Heat over medium-high heat until shimmering. Add the meatballs in a single layer and cook until nicely browned on all sides (about 10 minutes). Transfer to a paper-towel-lined plate. Discard oil. Pour sauce into pan and scrape browned bits to add flavor. Add meatballs and cook about 5 minutes (more if desired).
