Penne with Sausage

2 Tbsp olive oil
2 small red onions
5 Italian pork or turkey sausage- meat removed and crumbled
1 1/2 tbsp chopped fresh Rosemary
2 bay leaves
2 small dried chilies crumbled (or crushed red pepper flakes)
1 3/4 pounds plum tomatoes, drain and chopped
salt and pepper
5 oz whipping cream
Heat oil and saute onion until light brown. Add sausage, rosemary, bay leaf and chili. Fry over high heat stirring to mash sausage. Remove all but 1 Tbsp fat and continue to cook 20 minutes. The sausage should become brown and disintegrate. Add tomatoes, stir and return to a boil.
Cook Penne and drain thoroughly.
Stir the cream into sauce along with penne and 1/2 of parmesan
Use remainder of parmesan for topping before serving
