Sonja's Chicken Chili

2 tbsp olive oil
1 medium onion - 1/4 inch dice
4 garlic cloves - finely chopped
1 lb fresh ground chicken
1 tbsp chili powder
1 tsp ground cumin
1 tsp crushed dried sage
2 (15 oz) cans black beans (drained/rinsed)
1 can diced tomatoes, drained
1 (14.5 oz) can tomato sauce
1 green pepper, seeded, 1/4" dice
1 yellow pepper, seeded, 1/4" dice
1 red pepper, seeded, 1/4" dice
1 1/4 cups loose-pack frozen corn
1/2 cup quartered black olives
1 jalepeno chili - seeded and chopped
1/2 tsp pepper
Heat oil in lg skillet (med-high). Add onion, and saute til tender.
Add garlic and saute for 1 minute. Stir in chicken and cooked through.
Sprinkle chicken with chili powder, cumin and sage. Add beans, tomatoes,
tomato sauce, peppers, corn, olives and jalapeno. Season with salt and pepper.
Bring to a boil, reduce and heat at a simmer for 20 minutes. Adjust seasoning if
necessary. Garnish with cilantro, sour cream and cheese.
