    Layered Potato Casserole

    List of Ingredients

    1 stick of butter
    1 onion, sliced
    1 red pepper, sliced
    2 c. prepared mashed potatoes
    1 c. sour cream
    2 c. cheese
    2 sliced, cooked potatoes
    house seasoning
    cooked bacon (optional)


    Preheat oven to 350 degrees.

    Saute the onions and red pepper in the stick of butter

    Take a casserole dish and spray with non-stick spray. Spread the mashed potatoes on the bottom. Spread the sour cream on top of the potatoes. Sprinkle your house seasoning on top of that.

    When the red pepper and onion are tender, layer them on top of the sour cream (only put in half the butter). Sprinkle with 1 c. of cheese. Layer sliced potatoes on the top. Drizzle with the rest of the butter. Sprinkle with more house seasoning and the remaining 1 c. cheese.

    *if you choose, top with crumbled bacon.

    Bake until hot and bubbly.
