    1/2 cup margarine, softened
    1 cup sugar
    2 eggs
    1 tsp vanilla
    2 cups flour
    2 tsp baking powder
    1/2 tsp salt
    3/4 cup milk
    1 1/4 cups flaked coconut


    Preheat oven to 350 F. Grease a 9 x 5 inch loaf pan. In a mixing bowl, cream the margarine and sugar. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla. Combine the flour, baking powder, and salt. Add to the creamed mixture alternately with the milk. Stir in the coconut. Pour into the prepared loaf pan. Bake for one hour or until a toothpick inserted into the center comes out clean. Cool for 10 minutes before removing the loaf from the pan. Place on a wire rack to cool completely. Yield: 1 loaf
