    My husbands friend Kim Winters

    List of Ingredients




    -1 Lb boneless skinless chicken breast cut into bite size pieces
    -1 large onion, chopped coarsely
    -1 green, yellow or red bell pepper, chopped
    -1 large tomato in season or 1 can of diced tomatoes
    -1 jar of your favorite salsa
    -2 TB sugar
    -salt
    -pepper

    Recipe



    -Brown chicken in large skillet.
    -You can brown it in butter, oil, or use non stick cooking spray whichever you prefer.
    -Add onion and pepper.
    -Cook until tender but not too soft.
    -Add tomato, salt, pepper, and sugar.
    -Mix well.
    -Add salsa and cook over low heat stirring frequently for about 10 minutes or until hot and bubbly.
    -Serve over rice.

    *you can also serve topped with guacamole, sour cream and/or shredded monterey jack cheese
