- Blend dry ingredients.
- Blend buttermilk and egg.
- Add dry ingredients to liguid and stir in butter. Be careful not to over mix. Mixture should be lumpy.
- Scale into muffin pans that have been sprayed with non-stick spray.
- Bake at 400ºF. for 20 to 25 minutes or until golden.
- Makes 1 dozen.
Add 1 1/2 cups blueberries and 1 teaspoon vanilla.
Add 1 1/2 cups diced strawberries and 1 tablespoon poppy seed.
Add 2 teaspoons cinnamon, 1 tablespoon orange zest, and 1/2 cup coarsely chopped walnuts. Use the juice for part of the liquid.
