I love Buckwheat cakes but the mixes and the ones in most restaurants are dreadful so I came up with my own version. They are so light and fluffy they almost float away.
List of Ingredients
- 1 cup buttermilk
- 1 egg
- 1 tablespoon vegetable oil or melted butter
- 1 tablespoon honey (or molasses or brown sugar)
- 1/3 cup buckwheat flour
- 1/2 cup all-purpose flour
- 2 tablespoons cornmeal
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Blend egg, buttermilk, oil and honey. Mix together flours, cornmeal, baking soda and salt. Blend into liquid ingredients and fat. Be careful not to over-mix. Cook on 350ºF griddle till well browned on both sides.

Really good spread with apple or pear butter instead of butter and syrup.
