    This is my favorite cake to have on my birthday... Enjoy!

    List of Ingredients




    1 3/4 c. sugar
    1/4 tsp. salt
    1 c. cake flour, sifted
    12 egg whites, room temperature
    1/3 c. warm water
    1 tsp. strawberry extract, or your favorite
    1 1/2 tsp. cream of tartar





    Recipe



    Preheat oven to 350.

    In a food processor, process sugar about 2 mins., until it is superfine.

    Sift 1/2 the sugar with the salt and cake flour. Set the remaining sugar aside.

    In a lg. bowl, use a whisk to thoroughly combine egg whites, water, strawberry extract, and cream of tartar.

    After 2 mins., switch to a hand mixer.

    Slowly sift the reserved sugar, beating continuously at med. speed.

    Once you have achieved medium peaks, sift enough of the flour mixture in to dust the top of the foam.

    Using a spatula, fold in gently. Continue until all of the flour mixture is incorporated.

    Carefully spoon mixture into an ungreased tube pan.

    Bake for 35 mins. before checking for doneness with a wooden skewer. When inserted halfway between the inner and outer wall, the skewer should come out dry.

    Cool upside down on cooling rack, for at least 1 hr., before removing from pan.

    Note:
    Use the freshest eggs you can get.


    Strawberry Glaze

    2/3 c. confectionary sugar
    2 T. butter or margarine, melted
    1-2 T. strawberry juice, from a box of frozen strawberries, thawed

    Mix confectionary sugar and butter.

    Stir in 1 T. of the strawberry juice. Stir in additional strawberry juice, 1 tsp. at a time, until glaze is thin enough to drizzle.
