    Colonial Carrot Pecan Cake

    List of Ingredients

    1-1/4 cup vegetable oil
    2 cups granulated sugar
    2 cups sifted flour
    1 cup finely chopped pecans
    4 eggs
    3 cups grated raw carrots
    2 t baking powder
    2 t cinnamon
    1 t salt
    1 t baking soda


    Combine oil and sugar and mix well
    Sift together remaining dry ingredients, sift half of
    the dry ingredients into sugar and oil
    Sift in remaining dry mixture alternating with eggs
    1 at a time mix well after each addition
    Add carrots and mix well
    Mix in pecans
    Pour into lightly oiled 10 inch tube pan
    Bake in a 325 oven about an hour and 10 minutes
    Cool in pan, upright, remove from pan and enjoy
