List of Ingredients
1 onion, chopped
1 garlic glove, chopped
2 tablespoons Olive Oil
1 green bell pepper, chopped
1 carrot, sliced in rounds
1 tomato, diced
2 teaspoons thyme, crushed
1/2 cup medium bodied white wine
24 shrimp, shelled and deveined
2 tablespoons fresh parsley, chopped
Salt & pepper to taste
Brown onions and garlic in olive oil fro 2-3 minutes.
Add green pepper, carots, tomato and suate together for 3 to 4 minutes.
Incorporate the thyme, white wine and shrimp.
Cook for 3 minutes.
Remove shrimp and reduce the sauce.
Return the shrimp to the pan. Sprinkle with parsley and serve with rice.
