    Chinese Style Roasting

    List of Ingredients

    • Roasting pan (deep if possible)
    • Wire rack (or horizontal rack is best)
    • 1-2 inches of water


    1. Place rack in roasting pan
    2. Add 1-2 inches of water
    3. Place meat on the rack
    4. Meat should not sit flat in a roasting dish stewing in its own juices
    5. Roasting starts with high heat (3/4 hour), which is later reduced to medium heat
    6. Baste during cooking with marinade (of your choice) or honey and warm water
