    Sante Fe Pasta

    List of Ingredients


    • 1 16 ounce package of Rotini pasta
    • 4-5 quarts of water
    • Dressing:
    • 1 cup of tomato juice
    • 1 1/2 tbs. olive oil
    • 1 tbs. red wine viegar
    • 1 1/2 tsp. chili powder
    • 3/4 tsp. paprika
    • 1/2 tsp. salt
    • 1/2 tsp. black pepper
    • BALANCE OF INGREDIENTS:
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup cooked frozen corn (thawed)
    • 1/3 cup chopped cilantro
    • 1/4 cup chopped shallots
    • 1/4 cup diced onion
    • 1/4 cup diced red bell pepper
    • 1/4 cup diced green bell peper
    • 1 large chicken breast, cooked and diced


    Instructions


    1. Bring 4-5 quarts of water to a boil

    2. Add the pasta,once the water begins to boil, cook for 8-11 minutes or until al dente

    3. Wisk all of the dressing ingredients together in a small bowl

    4. Cover and chill the dressing until you are ready to use it

    5. When pasta is done pour into a large bowl, add the dressing, then toss

    6. Add remaining ingedients to the pasta and toos until combined

    7. Cover and chill for several hours before serving
