    List of Ingredients

    • 2 tbs. olive oil
    • 2 tbs. butter
    • 2 lb. chicken, cut up in pieces
    • 1/2 lb. mushrooms, chopped
    • 1 large onion, chopped
    • 1 green bell pepper, chopped
    • 1 red bell pepper, chopped
    • 2 cloves garlic, pressed
    • 2 tbs. parsley, chopped
    • 1/2 cup water
    • 1/2 cup chicken broth
    • 1 can (6 oz.) tomatoe paste
    • 1/4 tsp. majoram, oregano and thyme leaves
    • 2 tsp. salt
    • 1/2 tsp. pepper


    1. Heat oil and butter in a skillet

    2. Add chicken and cook until brown on all sides

    3. Remove chicken and set aside

    4. Pour off fat and disgard all but 3 tbs. of drippings

    5. Add mushrooms, onion, bell peppers and garlic

    6. Reduce heat to meduim and cook stirring until onions are soft

    7. Stir in parsley, water, wine, tomatoe paste, majoram, oregano, thyme, salt and pepper

    8. Return chicken to pan

    9. Bring to a boil, cover and reduce heat, simmer until chicken is tender (40-45 minutes)
