    List of Ingredients

    • 4 chicken breasts, boneless, skinless
    • 1/2 cup flour
    • 2 tbs. olive oil
    • 1/4 cup green bell peppers, diced
    • 1/4 cup onions, diced
    • 1 tsp. minced garlic
    • 1/4 cup black olives, sliced
    • 1/2 cup tomatoes, diced
    • 2 tbs. Basil, chopped
    • 3/4 cup white wine or chicken broth
    • Salt & pepper to taste


    1. Heat oil in heavy skillet

    2. Dredge chciken in flour and saute

    3. Set aside and keep warm

    4. Add the peppers, onions and garlic to the skillet

    5. Cook until onions become transparent

    6. Add tomatoes, basil and olices

    7. Cook fo 2 minutes

    8. Add the wine and simmer until lightly thick

    9. Spoon over warm chicken
