    Spinach Bisque

    Got this off another member of our club, Nan's recipes. Very easy to make and very tasty.


    List of Ingredients


    • 1/2 cup chopped onion
    • 2 tbs. butter
    • 1/3 cup flour
    • 1/2 - 1 tsp. salt
    • 1/8 tsp. ground nutmeg
    • 2 1/2 cups milk
    • 1 cup water
    • 3/4 cup processed cheese
    • 1 package of frozen spinach, chopped, thawed and drained


    Instructions


    1. In a 3 qt. saucepan, saute onions in butter until tender
    2. Stir in the flour, salt and nutmeg until smooth
    3. Gradually wisk in milk and water
    4. Add cheese, cook and stir over medium heat until melted
    5. Add spinach, cover and simmer 4-5 minutes or until heated through
    6. Serve with crackers
