Spinach Bisque
Got this off another member of our club, Nan's recipes. Very easy to make and very tasty.
List of Ingredients
- 1/2 cup chopped onion
- 2 tbs. butter
- 1/3 cup flour
- 1/2 - 1 tsp. salt
- 1/8 tsp. ground nutmeg
- 2 1/2 cups milk
- 1 cup water
- 3/4 cup processed cheese
- 1 package of frozen spinach, chopped, thawed and drained
Instructions
- In a 3 qt. saucepan, saute onions in butter until tender
- Stir in the flour, salt and nutmeg until smooth
- Gradually wisk in milk and water
- Add cheese, cook and stir over medium heat until melted
- Add spinach, cover and simmer 4-5 minutes or until heated through
- Serve with crackers
