    Breakfast: Buttermilk Maple Nut Waffles

    List of Ingredients

    1 cup whole wheat pastry flour
    2 tablespoons wheat germ
    2 tablespoons oat bran
    2 teaspoons baking soda
    2 tablespoons olive oil or butter
    1 1/2 cups buttermilk or plain yogurt
    1 egg, beaten
    1 tablespoon maple syrup
    1/2 cup coarse chopped walnuts

    Recipe

    In medium bowl, combine flour, wheat germ, bran and baking soda. In small bowl, blend together oil, buttermilk or yogurt, egg and syrup. Add to the dry ingredients. Stir in nuts and mix til combined; do not beat! Heat waffle iron. Brush lightly with butter or oil. Pour in enough batter to just fill - do not overfill. Cook til steaming stops and waffles are crisp. Serve with applesauce or maple flavored yogurt. Serves 3.
