    Black Beans with Ham in Sour Cream

    2 cans black beans
    1 1/2 cups cooked ham, diced
    2 cups sour cream
    1/3 cup orange juice
    1 teaspoon dried mint, crumbled
    1/2 teaspoon salt
    1/4 teaspoon black pepper

    Recipe



    rinse beans and drain, then place in casserole. Preheat oven to 350�F. Stir in ham, sour cream, orange juice, mint, salt and pepper. At this point, you can refrigerate covered casserole for up to 2 days. Bake the beans, covered, until heated through, 30-40 minutes. Serve as entree or use as side dish. Serves 6-8.
