Pudding: Apple Pudding Cake

2 eggs lightly beaten
1 cup firmly packed brown sugar
1 cup sugar
2 teaspoons ground cinnamon
1/2 cup vegetable oil
2 1/4 cups self-rising flour
4 cups chopped apples
1 cup chopped walnuts
Confectioners� sugar icing Recipe
Preheat oven to 350�F.� Spray 13x9-inch baking pan with non-stick vegetable spray. In a large mixing bowl, combine eggs, sugars, cinnamon, oil, and flour; beat until thoroughly blended.� Stir in apples.� Pour into prepared baking pan.� Sprinkle walnuts over the top of the batter. Bake for 30 minutes or until tester inserted in the center comes out clean.� Cool in pan on a wire rack.� Drizzle with confectioners� sugar icing.
