    Pecan Delight Cookies

    List of Ingredients




    1 cup sifted flour
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    1/2 cup brown sugar
    1 stick butter (1/2 cup)

    Recipe



    Sift-dry ingredients into a bowl. Add-brown sugar and butter. Mix well. Pat into a greased 9 inch square cake pan. Bake at 350F for 10 to 15 minutes.

    Topping
    1 cup brown sugar
    2 eggs, well beaten
    1 teaspoon vanilla extract
    2 tablespoons all purpose, flour
    1/4 teaspoon salt
    1 and 1/2 cups flaked coconut
    1 cup pecans, chopped

    In a large bowl, mix all ingredients together. Then, pour over baked mixture. Bake at 350�F until browned about 20 to 25 minutes. Cool, then cut into bars. Makes about 36 cookies.
