    Shortbread: Scottish Shortbread Cookies

    List of Ingredients

    1 cup butter -- softened
    2 1/2 cups flour
    1/2 cup sugar

    Recipe

    Beat butter and sugar till smooth. Gradually work in flour. Shape into ball, flatten. Wrap in waxed paper. Refrigerate 30 minutes. Heat oven to 300�F. Roll dough out on lightly floured surface to 1/4" thick. Cut into 3" rounds. Transfer with a wide spatula to cookie sheet, 1" apart. Bake for 30 minutes or pale golden brown. Remove, cool completely.
