    4 pieces(s) corn on the cob
    3 medium scallion(s), two diced and one chopped
    1/4 cup(s) sweet red pepper(s), diced
    2/3 oz soft-type goat cheese, about 2 tbsp
    2 tbsp fresh lemon juice
    1/8 tsp table salt, or to taste
    1/8 tsp black pepper, or to taste�

    Recipe



    Steam corn until tender. Cool, then cut kernels from cob. Stir together corn, diced scallions and red pepper. Combine chopped scallion, goat cheese and lemon juice in a blender or food processor; process until smooth. Pour over corn mixture and toss well; season to taste with salt and pepper and toss again. Yields about 3/4 cup per serving. Serves 4.
