Marinated Mushrooms

List of Ingredients
- � cup olive oil
- ⅓ cup red wine vinegar
- 1 � teaspoons salt
- � teaspoon sugar
- 1 teaspoon minced garlic
- 2 bay leaves
- 1 � pounds button mushrooms, trimmed
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried basil
Instructions
- Combine the oil, vinegar, salt, sugar, garlic, and bay leaves in a medium saucepan over high heat and bring to a boil.
- Add the mushrooms, parsley, and basil; reduce the heat and simmer until the mushrooms are tender, 3 to 5 minutes.
- Pour the mushrooms and their marinade into a glass or earthenware container and refrigerate overnight or up to 3 days. Bring to room temperature before serving.
Makes about 3 cups
