This simple, perfect version comes from Doris Kemp, owner of Mammy's Cupboard in Natchez, Mississippi. She insists on using Duke's mayonnaise, a tart, tangy, less-sweet-than-Hellman's spread that's an essential part of the Southern pantry."

◦ 1 pound sharp yellow Cheddar cheese
◦ 1 (8-ounce) jar diced pimientos, drained
◦ 1 (8-ounce) package cream cheese
◦ � cup Duke's mayonnaise
◦ 2 tsp garlic salt
◦ � tsp cayenne pepper
◦ Crackers, for serving
Recipe
Grate Cheddar cheese into the bowl of a stand mixer fitted with a paddle. Add pimientos, cream cheese, mayonnaise, garlic salt, and cayenne (or to taste). Beat on medium speed until smooth, about 1 minute. Serve with crackers.
