    Sauce: Kansas City Barbecue Sauce

    List of Ingredients

    ◦ 1 tablespoon unsalted butter
    ◦ � small onion, finely grated
    ◦ 2 cloves garlic, minced
    ◦ Coarse salt and freshly ground pepper
    ◦ � cup packed light brown sugar
    ◦ 2 tablespoons unsulfured molasses
    ◦ 1 � cups ketchup
    ◦ 1 tablespoon yellow mustard
    ◦ ⅓ cup cider vinegar
    ◦ 2 tablespoons Worcestershire sauce
    ◦ � teaspoon cayenne

    Recipe

    In a medium saucepan, melt butter over medium heat. Add onion and garlic; season with salt and pepper. Cook, stirring occasionally, until onion is soft, 2 to 3 minutes. Add brown sugar, molasses, ketchup, mustard, vinegar, Worcestershire, and cayenne. Bring to a simmer.

    Cook, stirring occasionally, until thick, about 5 minutes.
    (Sauce can be cooled completely and refrigerated in an airtight container up to 2 weeks; reheat over low before serving.)

    Makes 1 � cups
    (enough for two 2 �-pound rib racks)
