Slow-Cooked Vanilla Spice Oatmeal

"To be frank, I am not a morning person. But if breakfast is ready and waiting before I even get out of bed, it softens the blow a bit. Slow-cooking hearty steel-cut oats requires almost no effort, and the addition of a vanilla bean transforms this humble food into something otherworldly."
List of Ingredients
◦ 1 cup steel-cut oats
◦ � vanilla bean, split lengthwise
◦ 2 tablespoons light brown sugar, plus more for serving
◦ � teaspoon ground cinnamon
◦ ⅛ teaspoon freshly grated nutmeg
◦ ⅛ teaspoon ground cardamom
◦ Half-and-half or heavy cream, for serving
Recipe
Coat the sleeve of a 5-quart slow cooker with nonstick cooking spray. Place sleeve in slow cooker.
Combine all ingredients (except cream) in the slow cooker; add 3� cups water and stir to blend. Set slow cooker to low and cook for 8 hours.
Remove vanilla bean and scrape any remaining caviar into oatmeal. Stir well and serve with brown sugar to taste and a drizzle of half-and-half or heavy cream (depending on the kind of day that awaits you).
Serves 4
� Jazz up this creamy, dreamy oatmeal by increasing the water to 4 cups and adding ⅔ cup chopped dried fruit before cooking. I love pairing dried apricots and cherries with Tahitian vanilla.
