Crab: Deviled Crab

- � cup chopped celery
- � cup chopped onion
- � cup chopped red bell pepper
- ⅓ cup butter, melted
- 1 pound fresh lump crabmeat, drained
- 1 cup saltine cracker crumbs, divided
- � cup chopped fresh parsley
- � cup whipping cream
- 1 tablespoon Dijon mustard
- 1 teaspoon dry mustard
- � teaspoon freshly ground black pepper
- � teaspoon hot sauce
- � teaspoon salt
- 1 tablespoon butter, melted
- Paprika
- Lemon wedges (optional)
Instructions
- Cook first three ingredients in ⅓ cup butter in a large skillet over medium-high heat, stirring constantly, until tender. Remove from heat. Gently stir in crabmeat, � cup cracker crumbs, and parsley.
- Combine whipping cream and next five ingredients; gently stir into crabmeat mixture. Spoon into six baking shells or individual baking dishes.
- Brown remaining � cup cracker crumbs in 1 tablespoon butter in a small skillet over medium heat, stirring often. Sprinkle each serving with cracker crumbs and paprika.
Bake, uncovered, at 350� for 15 to 20 minutes or until thoroughly heated. Serve with lemon wedges, if desired.
