• 2 carrots
  
• 2� cups water
  
• 1 egg
  
• � tsp vanilla
  
• 2 Tbsp honey
  
• 1� bananas, overripe and pur�ed
  
• 4 cups whole wheat flour
  
• 1 Tbsp baking powder
  
• 1 Tbsp cinnamon
  
• 1 Tbsp nutmeg
  






Instructions



1. Shred the carrot with a hand shredder or in a blender.
   Mix all wet ingredients together in a small bowl, then add the pur�ed banana. Mix together thoroughly. Set aside.
   
   
2. Combine the dry ingredients. Add the wet ingredients to the dry and mix thoroughly, leaving no dry mixture on the bottom.
   
   
3. Coat a 12-muffin pan with nonstick spray. Fill each muffin cup three-quarters full with batter. Bake about 1 hour at 350� F.
   
   Makes 12 muffins.
