Green Tomato Relish

List of Ingredients
- 1� pounds green tomatoes, quartered, seeded, and thinly sliced
- 1 red bell pepper, thinly sliced
- 1 poblano chile, thinly sliced
- 1 large white onion, sliced
- 1 cup matchstick carrots
- � cup water
- 2 cups distilled white vinegar (5% acidity)
- 1 cup granulated sugar
- 1 Tbsp kosher salt
- 1 Tbsp mustard seeds
- � tsp ground turmeric
- ⅛ tsp ground cloves
- ⅛ tsp ground allspice
Instructions
- Bring the tomatoes, peppers, onion, carrots, � cup water, and 1 cup vinegar to a boil in a large stockpot over high; reduce the heat to medium-low and simmer, stirring occasionally, 30 minutes. Drain.
- Return the vegetables to the stockpot, and stir in the sugar, salt, mustard seeds, turmeric, cloves, allspice, and remaining 1 cup vinegar. Bring to a boil over medium-high heat; reduce the heat to medium-low, and simmer 5 minutes. Cool completely.
- Transfer to a jar; screw on the lid, and chill 30 minutes. Store in the refrigerator up to 1 week.
