Buttered Baby Spinach

- � stick (4 Tbsp) unsalted butter
- 1� pounds baby spinach
- Salt and freshly ground black pepper
Instructions
- Heat butter in a wide 6-quart heavy pot over moderate heat until foam subsides. Add spinach and cook, stirring, until just wilted and bright green, 2 to 3 minutes. Season with salt and pepper.
