Maple Mashed Sweet Potatoes

- 6 pounds sweet potatoes (about 5), scrubbed
- 1 stick (8 Tbsp) unsalted butter, melted
- � cup heavy cream, warmed
- 2 Tbsp pure maple syrup
- 1 tsp salt
- � tsp freshly ground black pepper
Instructions
- Put a rack in lower third of oven and preheat oven to 400� F. Line a baking sheet with sides with foil.
- Prick potatoes with a fork. Bake on foil-lined baking sheet until very tender, about 1 hour.
- When cool enough to handle, halve potatoes lengthwise and scoop flesh into a large bowl; discard skins. Mash potatoes with a potato masher or, for a smoother pur�e, force through a potato ricer into a bowl. Stir in butter, cream, syrup, and salt and pepper.
