Fudgy Brownies w/Easy Chocolate Frosting
1 stick (4 oz.) margarine (or butter, your choice)
2 squares unsweetened chocolate or 6 Tbsp. cocoa powder and 2 Tbsp. cooking oil
1 cup sugar
3/4 cup walnuts or pecans, roughly chopped (optional)
3/4 cup flour
1 tsp. vanilla
1 cup chocolate chips
Preheat oven to 350 (325 if using glass pan). Coat 8" square baking pan with cooking spray and set aside.
Melt margarine with chocolate in a saucepan, stirring. As soon as it is melted, remove from heat and stir in sugar. Stir in eggs, one at a time.
Toss optional nuts with flour and stir into chocolate mixture. Add vanilla and mix in. Pour batter into prepared pan, smoothing top.
Bake for 30 minutes and remove from oven. Immediately pour chips over top of brownies in a single layer. After 5 minutes, smooth melting/melted chips with the back of a spoon.
Cut into pieces after chip frosting sets.
Variation: Snickers Fudgy Brownies. Omit nuts and substitute 4 fun-sized Snickers bars, cut into small dice.
