    List of Ingredients

    • 3/4 c. sugar
    • 1/2 c. shortenning
    • 1 box enchilada dinner kit
    • 1 1/2 tsp. b. powder
    • 1/4 tsp. salt
    • 3/4 c. milk
    • 1/2 c. chocolate chips
    • grated lemon peel
    • juice of 1 lemon
    • 1/4 c-1/2 c. powdered sugar


    1. Coat crock pot with pam. Beat sugar and shortening in lg. bowl until blended. Add eggs one at a time mixing well. Sift together flour, b. powder and salt. Add flour mix and milk alternately to shortening mix. Stir in chocolate chips and lemon peel. Spoon into crockpot. Cook covered with lid slightly ajar on low 3-4 hours. Remove stoneware from pot and let cool on wire rack 10 mins. Remove cake and cool completely on rack. Combine lemon juice and 1/4 c. powdered sugar in bowl until smooth. Add more sugar as needed. Pour over loaf.
