    Skillet Chicken Enchiladas

    List of Ingredients

    1 lb chicken breasts chopped

    ◦2 c. shredded pepper jack divided

    ◦1 can enchilada sauce divided

    ◦1/2 c. salsa

    ◦8 tortillas

    ◦2 c. shredded lettuce

    ◦1/2 c. sour cream


    Spray a lg. skillet with pam. Heat on med. high heat. Add Chicken. Cook stirring 4-5 min. Reduceheat to low. Add 1/2 the enchilada sauce, salsa and 1/2 the cheese.

    2.Cook stirring until cheese is melted.

    3.Place 1/4 c. chicken mix in center of each tortilla. Roll up.

    4.Arrange each enchilada on a dish seam side down. Heat remaining enchilada sauce in skillet unti hot. Pour over enchiladas. Serve with lettuce and cheese.
