    Herbed Pork and Apples

    List of Ingredients

    1 tsp. each sage, thyme, rosemary and marjoram

    ◦1 tsp. salt

    ◦1 tsp. pepper

    ◦1 loin pork roast bone in

    ◦4 med. tart apples cut in 1 inch cubes

    ◦3 tbsp. brown sugar

    ◦1 c. apple juice

    ◦2/3 c. maple syrup


    Combine herbs, salt and pepper. Rub over roast. Cover and refrigerate several hours. Bake uncovered at 325 degrees 1 1/2 hours.

    2.Drain fat. Mix apples and onions with brown sugar. Spoon around roast. Continue to roast 1 hour. Transfer roast, apples and onions to platter.

    3.Skim excess fat from meat juices. Pour into a heavy skillet or leave in roasting pan. Add apple juice and syrup.

    4.Cook and stir over med. high heat until liquid has been reduced by half.
