4 med. potatoes cooked, peeled and cubed
◦2 tbsp. butter melted
◦1/8 tsp each salt and pepper
◦2 - 4 tbsp. milk
◦1 c. shredded cheddar divided
◦1/4 c. chopped onion
◦1/4 c. chopped green pepper
In bowl mash potatoes until smooth. Add butter, salt, pepper and enough milk to make a soft mashed potato consistency.
2.Stir in 2/3 c. cheese, ham, onion and green pepper. Transfer to a greased 1 1/2 qt. casserole dish.
3.Bake uncovered at 350 degrees 20-25 min. Sprinkle with rest of cheese.
