Chicken and Three Pepper Corn Chowder

2 tbsp. butter
◦3 c. frozen pepper and onion stir fry
◦1 lg. clove garlic minced
◦1 lb chicken breasts
◦2 c. frozen corn
◦1 c. chicken broth
◦1/8 tsp. cayenne
◦8 oz velveeta
◦1/2 c. whipping cream
◦1 tbsp. chopped fresh cilantro
In lg. pan melt butter over med. heat. Add veggies except garlic cook and stir 5 - 7 min. Add garlic and stir 30 seconds. Remove veggies from skillet. Set aside.
2.Add chicken, corn, broth and cayenne. Bring to a boil. Reduce heat. Cover and simmer 5 min. Add cheese and cream to chicken mix. Cook and stir until cheese is melted. Stir in cilantro.
