    Recipe Introduction

This is to be used in another recipe I posted which is Coquilles Saint-Jacques Diana. (I regret I did not put the two in the same recipe.)

    List of Ingredients

1 cup large fresh garlic cloves; About 1 cup extra-virgin olive oil

    1. Peel the garlic and combine in a saucepan with the olive oil to cover the garlic completely. Bring to a simmer and cook over medium-low heat until the garlic is tender: usually about 20 minutes.

    2. The garlic is ready to be served at once, but can be stored indefinitely. To store, allow the mixture to cool and then transfer to a mason jar, making sure that the garlic is completely covered with olive oil. Refrigerate at once. To serve, remove the the garlic from the olive oil and warm in a suacepan over low heat. The olive oil can be used separately to prepare a fresh and flavorful French vinaigrette salad dressing.

    YIELD: 1 cup
