    Recipe Introduction

This is a favorite. I adjust this recipe as my family does not like hot food, I omit this hot red pepper sauce. Common sense:: IF your family does not like a spice or such, OMIT it, substitute or adjust the amount! If like more spicy, add more. My family does not like poultry seasoning so I cut the amt requested in half.

    List of Ingredients

    Oven-Fried Chicken

    Cuisine: American
    Category: poultry
    Serves: 6

    1 c buttermilk
1/2 t hot red pepper sauce
    1 chicken (3-3 1/2 lbs) cut into 8 pieces
1/2 c plain dry bread crumbs
    1/2 c cornmeal
    3/4 t poultry seasoning
    3/4 t salt
    vegetable cooking spray

    1. Heat oven to 425 F. Line baking pan with aluminum foil, and spray with cooking spray.

    2. Combine buttermilk and pepper sauce in resealable plastic bag. Remove skin from all chicken pieces except wings. Put chicken in bag, seal and shake to coat. Refigerate 10 minutes or up to 2 hours. Combine bread crumbs, cornmeal, poultry seasoning and salt in shallow bowl. Drain chicken and dredge in crumb mixture.

    3. Place coated chicken pieces in prepared baking pan and spray well with vegetable cooking spray. Bake 20 minutes, spray again (do not turn chicken) , bake 20 minutes more . Let cool 10 minutes.
