    This is a very tasty German cookie. Please try it!

    List of Ingredients

    German Springerle

    Makes 50 or more cookies

    2 eggs
    1/4 cup fine granulated sugar
    1 cup fine granulated sugar
    2 1/2 cups all-purpose flour
    1/2 tsp. baking powder or 1/4 tsp. bakers' ammonia (powdered)
    1/2 tsp. salt
    1 tsp. crushed anise seeds
    1 tsp. grated lemon rind



    Beat eggs and 1/4 cup sugar until thick.

    Add 1 cup sugar gradually and beat well.

    Sift together next 4 ingredients.

    Mix anise seeds and lemon rinds with the sifted ingredients. Beat into the egg mixture to make a med. stiff dough.

    Roll dough onto a well floured board to about 1/2' thickness. Dust lightly with flour. Press a springerle rolling pin over the dough to make the springerle designs. Cut the cookies in squares. Place them on a lightly
    greased cookie pan and let dry uncovered for at least 12 hrs.

    Bake at 325* for 25-30 min. Bake very light.
