    List of Ingredients

    SPAGHETTI with Chicken:

    2 T olive oil
    1 large onion
    1 green bell pepper - seeded and chopped
    1 clove of garlic - crushed
    4 T tomato paste
    1/2 c red wine
    1/2 c chicken stock
    4 tomatoes - peeled and roughly chopped
    4 oz mushrooms - sliced
    1 bay leaf
    4 boneless chicken breasts - skinned and sliced
    12 oz spaghetti
    1 handful of basil leaves - shredded
    freshly grated parmesan cheese - to serve


    This is the microwave method:

    Mix together the oil, onion, bell pepper, and garlic in a microwave safe bowl. Cover the bowl and cook on a full power for 5 minutes. Stir in the tomato paste, wine and stock. Place the tomatoes, mushrooms and bay leaf in the soaked clay pot. Season well. Then arrange the chicken slices on top. Pour the onion mixture over. Cover the bowl and cook on full power for 10 minutes. Stir well, then reduce the setting to medium power. Cook for an additional 20 minutes - stirring once.

    Meanwhile, lower the spaghetti into a pan of boiling salted water and bring back to a boil. Boil for 15 minutes or until just tender. Drain and divide between serving plates.

    Ladle the chicken mixture over the top and sprinkle with basis.

    Serve with Parmesan cheese. This recipe serves 4. Calories: 544 per serving.
