    This is a delightful nutritious and low calorie dish

    List of Ingredients

    Crustless Feta and Cheddar Quiche
    Makes 8 main-dish servings.

    Nonstick cooking spray
    1 cup refrigerated or frozen egg product, thawed
    1/3 cup whole wheat pastry flour
    1/4 teaspoon black peper
    1/8 teaspoon salt
    1-1/2 cups low-fat cottage cheese (12 ounces)
    1 10-ounce package frozen chopped broccoli, cooked and drained
    1 cup crumbled feta cheese (4 ounces)
    1 cup shredded fat-free cheddar cheese (4 ounces)


    1. Lightly coat a 9-inch pie plate with cooking spray.

    2. In a medium mixing bowl, combine egg product, pastry flour, pepper and salt. Stir in cottage cheese, broccoli, feta and cheddar. Spoon into the pie plate.

    3. Bake in a 350 degree F oven for 40 to 45 minutes or till a knife inserted near center comes out clean. Cool on a wire rack for 5 to 10 minutes before serving.

    Nutrition facts per serving: 130 calories, 4 g total fat, 19 mg cholesterol, 511 mg sodium, 8 g carbohydrate, 1 g fiber.
