    My kids are picky eaters and this seemed to hit the spot with them (without the cranberries!) Delicious sandwich. Great for brunchs and casual get togethers. Can also cut into smaller pieces and use as an appetizer.
    Time: 15 minutes (15 min prep)
    Makes: 4 servings

    List of Ingredients

    2 cups cubed, cooked chicken breasts
    1/4 cup diced celery
    1/4 cup golden raisins
    1/4 cup dried cranberries
    1/4 cup sliced almonds
    3/4 cup mayonnaise or salad dressing
    2 tablespoons chopped red onions
    1/4 teaspoon salt, optional
    1/4 teaspoon pepper
    4 plain croissants, split


    In a bowl, combine the first 9 ingredients.
    Spoon about 1/2 cup into each croissant.
