    List of Ingredients


    • 3/4 cup sugar
    • 1/4 cup fresh lemon juice
    • 2 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup chopped pecans or almonds
    • 2 tablespoons melted butter
    • 1 egg
    • 2 teaspoons baking powder
    • 8oz. lemon yogurt
    • 1 tablespoon grated lemon rind


    Instructions


    1. Combine sugar, butter, and lemon juice. Add egg and beat until smooth.
    2. Sift flour, baking soda and salt; stir into sugar mixture. alternating with yogurt. Stir only until blended.
    3. Add lemon rind and nuts.
    4. Spoon batter into greased 8" loaf pans.
    5. Sprinkle sugar on top before baking.
    6. Bake in a preheated 350* oven for 60 minutes, or until toothpick comes out clean.
