Apple Slaw w/ Poppy Seed Dressing

1 c. coarsely chopped unpeeled Jonathon apple
1 tsp. lemon juice
2 T. nonfat sour cream
4-1/2 tsp. skim milk
1 T. frozen apple juice concentrate, thawed
1 tsp. sugar
3/4 tsp. poppy seeds
1/2 c. sliced carrots
1/3 c. shredded red cabbage
1/3 c. shredded green cabbage
1/3 c. red cabbage
2 T. finely copped green pepper
Additional cabbage leaves, optional
Combine apple and lemon juice in resealable plastic bag. Seal and toss to coat.
Combine the next 5 ingredients, mix until well blended. Add apple mixture, carrots cabbages and bell pepper; toss to coat. Serve on cabbage leaves if desired.
