    Golden Broccoli Salad

    Recipe Introduction

    You may want to serve this instead of traditional cole slaw. It's both attractive and tasty.
    Serves 6 (3/4 cup)

    List of Ingredients

    • 3 1/4 cups chopped broccoli
    • 1 cup shredded carrots
    • 1/2 cup chopped onion
    • 3 oz shredded reduced-fat Chedder cheese (3/4 cup)
    • 2 tablespoons Bacon Bits
    • 3/4 cup fat-free mayonnaise
    • 2 tablespoons pourable Splenda
    • 1 1/2 teaspoons prepared mustard
    • 2 tablespoons skim milk


    1. In a large bowl combine broccoli, carrots, onion, Chedder cheese and Bacon Bits. In a small bowl combine mayonnaise, Splenda, mustard, and skim milk. Add mixture to broccoli mixture. Toss gently to combine. Cover and refrigerate until ready to serve.

    HE: 1 1/2 Vegetable, 2/3 Protein, 32 Optional Calories
    99 Calories, 3gm Fat, 7gm Protein,
    11gm Carbohydrate, 404mg Sodium
    DIABETIC: 2 Vegetable, 1/2 Protein
