    Almond Biscotti

    1/4 c. finely chopped slivered almonds
    1/2 c. sugar
    2 T. butter
    4 egg whites, lightly beaten
    2 t. almond extract
    2 c. all-purpose flour
    2 t. baking powder
    1/4 t. salt

    Preheat oven to 375*F. Place almonds in baking dish and bake 7-8 minutes until lightly browned. Set aside.
    Beat sugar and butter in medium bowl with mixer until smooth. Add egg whites and almond extract; mix well. Combine flour, baking powder and salt in a differant bowl. Mix well. Stir egg wheite mixture and almonds into flour mixture until well blended. Spray two 9X5" loaf pans with cooking spray. Evenly divide dough between the pans that have been prepared. Spread dough evenly onto the bottoms of the pans with your fingertips. Bake 15 minutes or until knoife inserted in the centers come out clean. Remove from oven and turn onto a cutting board. As soon as loaves are cool enough to handle cut each oaf into 16 half inch slices.
    Place slices on baking sheets that have been sprayed with nonstick cooking spray. Bake 5 minutes more or until golden brown. Serve warm or cooled completely.
