Minted Chicken Salad
List of Ingredients
4 chicken breast halves
1 small sweet onion
5 sprigs fresh mint
1 tsp salt
4 cups water
1 cup seedless green grapes
1/3 cup celery
2/3 cup yogurt
2 tbsp chopped fresh mint
1/8 tsp garlic powder
1 can mandarin oranges
1 package slivered almonds, toasted
1 sm canteloupe, peeled and sliced.
Combine first five ingredients in a dutch oven; bring to a boil.
Cover and reduce heat, simmer 45 minutes or until chicken
is tender. Drain chicken. Discard onion and mint. Skin and
bone chicken. Cut into bite size pieces. Combine chicken,
grapes and celery. Set aside. Combine yogurt, chopped
mint and garlic powder. Add chicken to mixture and toss
gently. Fold in mandarin oranges. Sprinkle with almonds.
Serve in canape shells. Makes 40 small canapes.
