    Apricot Date Biscotti

    List of Ingredients

    1/3 cup butter
    3/4 cup sugar
    2 eggs
    2 tbsp orange juice concentrate, thawed
    2 tbsp water
    2 tsp grated orange zest
    1 tsp vanilla
    2 2/3 cup flour
    2 1/4 tsp baking powder
    1 tsp cinnamon
    2/3 cup dates, pitted, dried/chopped
    2/3 cup apricots, chopped/dried

    Instructions :
    Preheat oven to 350. Spray baking sheet with vegetable spray.

    1) In a large bowl, cream together margarine and sugar; add eggs, orange juice
    concentrate, water, orange zest and vanilla and mix well.

    2) In a bowl, combine flour, baking powder, cinnamon, dates and apricots; add to wet
    ingredients and stir just until mixed. Divide the dough in 3 portions; shape each portion
    into a 12-inch log, 2 inches wide, and put on prepared baking sheet. Bake for 20
    minutes. Let cool for 10 minutes.

    3) Cut logs on an angle into 1/2 inch thick slices. Put slices flat on baking sheet and bake
    for another 20 minutes or until lightly browned.

    If you don't like dates and omit, and substitute for extra apricots.
