    Orange Pistachio Biscotti

    List of Ingredients

    1 stick butter, softened
    3/4 cup sugar
    1 Tbl. grated orange zest
    1/2 tsp. vanilla
    2 large eggs
    2 cups flour
    1 1/2 tsp. baking powder
    1/4 tsp. salt
    1/2 cup chopped white chocolate
    1/2 cup dried currants
    1 1/4 cup natural pistachios

    Preheat oven to 325o. In bowl of electric mixer beat together the butter, sugar, zest, and vanilla until light and fluffy. Add eggs 1 at a time, beating well after each one. Sift flour, powder, and salt. Gradually beat into butter mixture. Stir in remaining ingredients. Chill 30 minutes. Turn onto floured surface and halve. Shape into 2 flattish logs, about 12" long and 3" wide. Place on lightly greased baking sheets at least 3" apart. Bake until pale golden, 30 minutes. Cool 5 minutes. Cut crosswise on a diagonal into 1" thick slices and arrange cut sides down on baking sheet. Bake 15 minutes, until golden, transfer to racks and cool completely. Makes about 24 biscotti.
